This hearty and flavorful Sausage & Potato Hash is the perfect meal to cook on a flattop griddle. Crispy potatoes, savory sausage, and colorful veggies make this dish great for breakfast, brunch, or dinner.
Ingredients:
- 1 lb ground sausage (or sausage links sliced)
- 4 medium potatoes (peeled and diced into small cubes)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 1 small onion (chopped)
- 2 tablespoons olive oil (or butter)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the Griddle: Heat your flattop griddle to medium-high heat. Add olive oil or butter to the surface and allow it to heat up.
- Cook the Sausage: On one side of the griddle, cook the ground sausage (or sausage slices) until browned and fully cooked through, about 6-8 minutes. Break up the sausage with a spatula as it cooks. Once done, move it to the cooler side of the griddle to keep warm.
- Cook the Potatoes: On the other side of the griddle, add a little more oil and spread the diced potatoes in an even layer. Cook for 10-12 minutes, flipping occasionally, until they become crispy and golden brown on the outside and tender on the inside.
- Add the Veggies: Once the potatoes are nearly done, add the diced bell peppers and onions to the griddle. Sauté for about 3-4 minutes, just until the veggies start to soften. Season the mixture with garlic powder, smoked paprika, salt, and pepper.
- Combine Everything: Mix the cooked sausage into the potato and veggie mixture, stirring everything together on the griddle for 1-2 more minutes to combine the flavors.
- Serve and Enjoy: Garnish with fresh parsley, and serve hot! This hash is perfect as is or topped with a fried egg for an extra hearty meal.
Tips:
- For extra flavor, try using smoked sausage or chorizo.
- Add some heat by sprinkling red pepper flakes or using hot sausage.
