This Miso-Glazed Black Cod is a classic Japanese dish known for its rich, buttery texture and deep umami flavors. The miso marinade brings out the natural sweetness of the black cod, making it a delicious, restaurant-quality dish you can easily recreate at home.
Ingredients:
4 black cod fillets (about 6 oz each)
1/4 cup white miso paste
2 tbsp mirin (sweet rice wine)
2 tbsp sake (Japanese rice wine)
1 tbsp soy sauce
2 tbsp sugar
1 tbsp sesame oil
1 tsp grated ginger (optional)
Instructions:
Make the miso marinade: In a bowl, whisk together the miso paste, mirin, sake, soy sauce, sugar, sesame oil, and ginger until smooth.
Marinate the cod: Place the black cod fillets in a resealable plastic bag or shallow dish and pour the miso marinade over them. Make sure the fish is fully coated. Seal the bag or cover the dish, then refrigerate for at least 2 hours, or up to 24 hours for maximum flavor.
Preheat the oven: When ready to cook, preheat the oven to 400°F (200°C).
Cook the black cod: Remove the fillets from the marinade and place them on a lined baking sheet. Bake for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
Broil for caramelization: For a beautifully caramelized glaze, switch the oven to broil and cook the fish for an additional 1-2 minutes, keeping an eye on it to avoid burning.
Serve: Plate the black cod with steamed rice and sautéed vegetables or a side of pickled ginger for an elegant meal.
Recipe Tips:
For a stronger flavor, marinate the cod overnight.
Pair with sake or green tea for a complete Japanese-inspired meal.
Alternative fish: If you can’t find black cod, try this recipe with Chilean sea bass or halibut.
