Ingredients:
- 4 slices of bread (preferably sourdough or your favorite)
- 2 tablespoons of butter, softened
- 4 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 2 jalapeños, deseeded and diced (adjust heat by keeping some seeds if desired)
- 4 slices of cooked bacon (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Pinch of salt and pepper
Instructions:
- Prepare the Jalapeño Mixture:
In a small bowl, mix the softened cream cheese, shredded cheddar, mozzarella, garlic powder, onion powder, salt, and pepper until well combined. Fold in the diced jalapeños. - Butter the Bread:
Spread a thin layer of softened butter on one side of each slice of bread. The buttered side will face out during cooking. - Assemble the Sandwich:
On the unbuttered side of two bread slices, spread the jalapeño cream cheese mixture evenly. If you’re adding bacon, place two slices of cooked bacon on top of the mixture. Top with the other slices of bread, with the buttered side facing out. - Grill the Sandwich:
Heat a skillet over medium heat. Place the sandwiches in the skillet, buttered side down, and cook for 3-4 minutes until golden brown and crispy. Flip the sandwiches and cook the other side until the bread is toasted and the cheese is melted, about another 3-4 minutes. - Serve:
Once cooked, remove from the skillet, slice the sandwiches in half, and serve hot.
Tips:
- For extra flavor, you can drizzle a bit of hot sauce inside the sandwich.
- If you prefer less heat, use pickled jalapeños or roast the jalapeños before adding them to the mixture.
